Practical notes to keep your cubes tasting great.
Noodles & Pasta
Avoid freezing noodles in cubes — after reheating they can come out a bit rubbery.
Pasta is OK to freeze as long as you undercook it slightly before freezing.
Freezer Hacks
Cookie cubes: Souper Cubes makes cookie freezer molds so you can freeze cookie dough, pop out portions, and bake from frozen.
Flavor bombs: freeze aromatics like garlic, ginger, etc. together so you can throw a cube straight into a meal.
Portion butter & sauces: make a big batch (e.g. garlic butter) and freeze in tablespoon portions for instant grab-and-go.
Once cubes are frozen, you can move them into ziplock bags to free up the trays/molds (and get them back in the dishwasher).
Label everything with cheap masking tape and a Sharpie — write the recipe name and, importantly, the date you made it. Cubes all look the same once frozen.
Suggested EquipmentYou don't need much, but the right kit makes batch cooking and freezing a lot smoother.
Souper Cubes trays (multiple sizes)The foundation of the whole system. Grab the 1/2 cup, 1 cup, and 2 cup sizes — different recipes portion better at different volumes. Silicone pops out cleanly and they stack in the freezer.
Cast iron Dutch ovenIndispensable for braises, soups, and slow-cooked sauces. Holds heat evenly, goes from stovetop to oven, and lasts forever. A Lodge 5.5 qt is a solid choice.
Food processorMakes blending sauces and pastes much faster. Useful for things like makhani sauce, pestos, and spice pastes where smooth texture matters.
Vacuum sealer + bagsOnce cubes are frozen solid, vacuum sealing them dramatically extends freezer life and prevents freezer burn. More useful if you're making large batches to last several weeks.
Large baking sheet / roasting trayEssential for roasting veg and proteins in bulk. A half-sheet (46×33cm) fits a full tray of chicken thighs or a large vegetable roast in one go.
Heavy-bottomed potFor grains, stocks, and anything that needs long gentle heat. A 4–6L pot with a tight-fitting lid covers most batch-cooking recipes.
