Brown the beef: Heat a pan over medium high heat. Add the ground beef and cook until browned, breaking it up as you go. Drain off excess fat.

2. Cook the bacon: Slice the bacon into small squares. Cook in a pan until browned and the fat has rendered. Drain on paper towel.

3. Prep the veg: Dice the capsicum and onion.

4. Load the slow cooker: Add baked beans, cooked beef, cooked bacon, capsicum, onion, brown sugar, ketchup, mustard, and taco seasoning to the slow cooker.

5. Cook low and slow: Stir well. Cover and cook on LOW for 7 hours (up to 8). Try not to lift the lid during cooking.

6. Finish: Stir well before serving. Taste and adjust seasoning if needed.

7. Cool and freeze: Cool completely. Portion into 1/2 cup cubes, freeze until solid, then transfer to labelled freezer bags.
